White Wild Pepper Grains
White pepper is derived from processing the fruits of Piper nigrum, a plant belonging to the Piperaceae family from which black pepper and green pepper are also obtained through various processes. For the production of white pepper, the berries of Piper nigrum are picked when almost ripe and are soaked in water to cause the outer shell to peel off.The cleaned grains are then dried and at the end of processing are smaller than those of black pepper and with a much milder flavor.
The flavor of white pepper is milder and sweeter than the black type. White pepper is perfectly suited to all dishes with a delicate flavor, such as fish, and for flavoring sauces, boiled potatoes and pickles. White pepper is very successful in Chinese cuisine because its less pungent aroma goes better with sweet and sour flavors.
