Caprini delle Prealpi Biellesi is a creamy cheese made exclusively from raw milk of the Saanen breed of goat, the largest of the dairy goats, native to Switzerland. Made by artisan cheesemakers in the province of Biella, it undergoes dry salting and matures for at least 30 days. Compared to brine salting (it gives much more flavor but less structure on the palate), dry salting does not cover the sweetness of the milk and gives a better crunchiness in the rind. So it will turn out more compact than a traditional goat's cheese.

  • Type: A soft paste
  • Texture: Creamy, spreadable
  • Rind: With added ash
  • Color: White
  • Flavor: Delicate, slightly acidic
  • Aroma: Pungent

Raw milk is the key element in the production of high-quality dairy products. It must be processed within a few hours of milking, which gives a product that encompasses all the flavor of the region of production, thus respecting all the strains of lactic acid bacteria, yeasts and molds present in the producer's stables.

When great-grandfather Luigi Guffanti began aging Gorgonzola in 1876, his genius intuition was the purchase of an abandoned silver mine in Valganna, in the province of Varese. Five generations have passed, the attention to the artisanal quality of the cheese product and the passion for careful ripening continue to characterize the Guffanti-Fiori family, consolidated to this day as one of the best ripeners in the world.
