How was Gianduja born?
Gianduja originated in Turin in 1806 out of necessity, in fact at the time cocoa was a precious and very expensive raw material due to the economic blockade ordered by Napoleon for the products of the British industry and its colonies, which made it complicated to find cocoa. Turin pastry chefs replaced a percentage of cocoa with hazelnuts from the Langhe, and the result was exciting. While hazelnuts were initially kneaded raw, it was not until 1853 that the decision was made to roast them, and that is how the final recipe took shape. An iconic haute patisserie product perfect for any time of day.
