Peppercorns are the fruits of a climbing plant that grows on trees and bushes, reaching heights of up to five meters. They are harvested before fully ripe if the intention is to produce black pepper. The berries are soaked in boiling water for two minutes and left to macerate overnight. They are then dried in the sun, acquiring the typical black color.

Grain selection is oriented toward fine varieties found on the southeastern coast of Madagascar, sourced from the best producers who can follow the high quality standards required by Sambava Épices. The grains are rich in essential oils and offer intense aromatic notes. The selection process is done by hand to achieve the highest quality, with an eye on both density and color.

This extraordinary pepper is a veritable explosion of fragrance, with its long-lasting fruit-laden notes and both citrus and floral undertones. It contains various aromatic elements such as limonene, it can be distilled to produce a pleasant essential oil. Compared to the green, white, and pink variants, black contains more piperine, which gives it a strong flavor.
