Frozen sweetened coconut milk with grated coconut is made from a blend of the milk and grated flesh of coconuts. After mixing, the ingredients are de-aerated in the company workshops in order to eliminate any risk of micro-oxidation and then heat treated by a special process.
This special coconut purée can be used in sweet (pastries, ice-creams, sorbets, chocolates, etc.) and cocktails recipes.
How are fruit purees made?
The fruits are processed in production facilities in France, crushed and sieved to a smooth and delicate consistency. The pulp is then de-aerated to avoid any risk of micro-oxidation and preserve the natural color of the fruit. The frozen puree then undergoes heat treatment, with a specific ultra-rapid process to preserve all the organoleptic qualities of the fresh fruit.
