A typical sauce of traditional Basque cuisine: a single ingredient, cod, which, through cooking in oil maintained at a low temperature, slowly cooks and becomes soft. The skin of the fish releases a gelatin during cooking that, with the oil, creates the typical sauce that is usually accompanied by slices of toasted bread.

Hooked in the clear waters of the Faroe Islands and processed directly on board; Giraldo cod is left to season for months in salt at a controlled temperature and cut into uniform parts to ensure even desalting and uniform taste.
