In 1932, on the outskirts of Salamanca, Isidoro Blázquez and Teresa Martín founded a ham company made following scrupulous artisanal techniques. With the goal of offering a unique ham for the most refined palates, Blázquez made its way as a modern family-run company loyal to traditional values. The final product is the excellence of Iberian gastronomy: pata negra ham, a symbol of Spain in the most prestigious international markets. Blázquez hams boast a long aging process, up to 5 years to enhance the meat's delicious flavor, resulting in a luxury ham for true connoisseurs.

Why Spanish Jamon is the king of hams

Ham is a real pride for the Spanish, it has a beautiful dark red color and is well marbled, the fat melts in the mouth with an incredible nutty flavor. Iberian pigs are a unique breed dating back millennia, fatter than traditional pigs. The abundance of fat allows for longer curing resulting in a more intense flavor.
The production of authentic Iberian jamon is a difficult and demanding journey that begins with the selection of Spanish pigs according to strict biological and quality criteria.
