La storia di Kenmare deve la sua origine a Rémy Benoit, pluripremiato chef francese che, nel 1982, si trasferì con la moglie a Kenmare dove aprì la Rémy’s House, ristorante di immediato successo con inserzioni nelle guide Michelin, Egon Ronay e Good Food Guides. Il suo approccio pratico alla gastronomia lo portò a rimettere in funzione un vecchio affumicatoio che si trovava nel giardino della sua abitazione, sotto la guida e i consigli esperti del vecchio responsabile Séan Jones, ancora oggi direttore dell’azienda.
